Rename Image Viewer -> Eye of GNOME

Loupe has been approved to enter GNOME core, replacing eog:

As part of the core app replacement process, the original app should be
modified to use a non-generic display name:

So let's go full circle and call it "Eye of GNOME" once again, instead
of "Image Viewer." This frees the "Image Viewer" name for use by Loupe.
