CodingGuidelines: formatting HEAD in documentation

The current practice is:

git/Documentation$ git grep "'HEAD'" | wc -l
24
git/Documentation$ git grep "\`HEAD\`" | wc -l
66

Let's adopt the majority as a guideline.
